Banana Maple Cupcakes

Whenever we have ripe bananas, I usually get the request to make my famous Banana Cupcakes with Maple Buttercream Frosting, which I am always happy to do! I hope you give these a try and enjoy them as much as we do!

Banana Maple Cupcakes

These cupcakes never last long around our house. We hope you enjoy them just as much!

Ingredients
  

  • 2 1/4 cups flour
  • 1 1/2 cups sugar
  • 1 1/2 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup butter, softened
  • 3/4 cup buttermilk
  • 3 ripe, spckled bananas puréed
  • 1 tsp vanilla
  • 2 eggs
  • Maple Buttercream Frosting

Method
 

  1. Heat oven to 350ºF. 
    Combine dry ingredients. Add in butter, buttermilk, puréed bananas and vanilla. Beat mixture for a couple minutes then add eggs and beat a couple more minutes.
    Line two dozen muffin pans with cupcake wrappers and pour batter into wrappers. 
    Bake 18-20 minutes or until the center of the cupcake springs back when lightly touched.
    Let cupcakes cool. Frost with a fluffy Maple Buttercream frosting. Top with sprinkles, because sprinkles are for winners!

    Got everything ready and started mixing then the recipe calls for eggs but doesn’t say how many… neither does the ingredient list

    Sure enough. The recipe has been updated – it contains 2 eggs.
