Banana Maple Cupcakes
These cupcakes never last long around our house. We hope you enjoy them just as much!
- 2 1/4 cups flour
- 1 1/2 cups sugar
- 1 1/2 tsp baking powder
- 1 tsp baking soda
- 1/2 tsp salt
- 1/2 cup butter, softened
- 3/4 cup buttermilk
- 3 ripe, spckled bananas puréed
- 1 tsp vanilla
- Maple Buttercream Frosting
Heat oven to 350ºF. Combine dry ingredients. Add in butter, buttermilk, puréed bananas and vanilla. Beat mixture for a couple minutes then add eggs and beat a couple more minutes.Line two dozen muffin pans with cupcake wrappers and pour batter into wrappers. Bake 18-20 minutes or until the center of the cupcake springs back when lightly touched.Let cupcakes cool. Frost with a fluffy Maple Buttercream frosting. Top with sprinkles, because sprinkles are for winners!
