Chocolate Coconut Clusters

My family enjoys these “cookies” so much. We keep a container on the top shelf in the freezer and when this container runs out a request is promptly made for another batch… ASAP 😀

I like to make things my family enjoys. It’s even more enjoyable when I know the ingredients are wholesome and nutritious, not only feeding their souls, but nourishing their bodies. And while these “cookies” are still very much in the dessert category, they are made with healthy fats, complex carbohydrates and naturally sweetened with raw honey making the occasional sweet treat even more enjoyable. And they are ridiculously simple to make too. No mixer, no baking, and minimal shaping. For Valentine’s Day this year I chose to drop two spoonfuls together in such a way as to form a heart on the pan but usually I just drop them in small circles. Mom especially enjoys the way the coconut flares out in this shape.

Chocolate Coconut Oat Clusters

My family enjoys these “cookies” so much we keep a container on the top shelf in the freezer. And bonus points! they're ridiculously easy to make.

Ingredients
  

  • 1/4 cup coconut oil melted
  • 1/2 cup fresh ground raw nut butter almond, cashew, peanut or a blend of all three
  • 1/4 cup raw honey or maple syrup
  • 2 tbsp cocoa powder
  • 1 tsp vanilla
  • 1/4 tsp salt
  • 1 cup oats
  • 1/4 cup unsweetened shredded coconut

Method
 

  1. In a large pan over low heat gently melt the coconut oil. Remove from heat and stir in nut butter, honey or maple syrup, cocoa powder, vanilla and salt until well combined. Stir in the oats and coconut. Drop by spoonfuls onto a baking sheet and freeze for a couple hours or until frozen. Transfer to a freezer container. OR, pour into a pan, freeze solid, then cut into bars and transfer to a freezer container. Keep in the freezer.
