Let it snow, let it snow, let it snow… in fact, let’s go ahead and bake up a blizzard in the kitchen!
Holiday time just wouldn’t be the same without Snowballs (also called Mexican Wedding Cake or Russian Tea Cakes). These cookies are a fabulous treat.
This recipe came from my Aunt’s kitchen where I have fond memories of assisting her in preparing for a festive holiday occasion. They melt in your mouth so quickly that you might even need to make a double batch.
Snowball Cookie Recipe:
- 1 cup butter, softened
- 1/2 cup powdered sugar
- 1 tsp vanilla
- a pinch of salt
- 2 1/4 cups flour
- 1 cup chopped almonds or walnuts
Cream butter and sugar together. Add vanilla. Stir dry ingredients together and add to creamed mixture.
Chill dough for 1-2 hours.
Roll dough into balls and bake for 10-12 minutes in a 350 degree oven.
Remove cookies from oven and let them cool slightly. Then, place a few in a small paper bag with powdered sugar and shake the bag gently to coat cookies with a dusting of sugar. Remove cookies from bag and cool completely on a wire rack. Repeat with remanding cookies.
