- In a large saucepan heat olive oil. Add in the onion and celery and sauté until softened. Add the garlic and sauté just until aromatic. Stir in the Italian seasoning. Add the tomatoes, tomato sauce, tomato paste and mushrooms. Stir to combine. Add salt, black pepper, cayenne pepper and bay leaf.
- Simmer for 30-60 minutes, stirring occasionally. Reduce heat to prevent splattering. Spoon sauce over spaghetti and serve immediately.
