Instant Pot Risotto

Finally! A risotto that's creamy, delicious AND quick to make.

Ingredients
  

  • 2 tbsp olive oil
  • 1 shallot minced
  • 2 cloves garlic minced
  • 1 cup arborio rice
  • 2 cups chicken broth
  • 1/3 cup parmesan cheese freshly grated
  • 1 tbsp butter

Method
 

  1. Turn instant pot to sauté and add olive oil and shallot. Sauté until onion is soft. Add garlic, stir and cook for 1 minute. Add in rice and broth.
  2. Put on lid and set pressure knob. Cook on high pressure for 6 minutes. Allow pressure to release naturally, about 10 minutes.
  3. Remove lid. Stir in parmesan cheese, butter and serve right away.
