Cucumber Salad

Course: Side Dish

Ingredients
  

  • 4 medium sized cucumbers peeled
  • 1/3 cup finely diced red onion or shallot
  • 1/4 cup olive oil
  • 1/4 cup red wine vinegar
  • 1/4 tsp dry mustart
  • 1 tsp italian seasoning
  • 1/4 tsp granulated garlic
  • 1/8 tsp salt
  • 1/8 tsp fresh ground black pepper
  • 1/8 tsp red pepper flakes
  • 1/2 tsp dill weed

Method
 

  1. Cut cucumbers in half lengthwise, then cut each half in half lengthwise. Thinly slice and place in serving bowl. Add diced onion or shallot.
  2. Whisk all other ingredients together vigorously and pour over cucumbers. Stir together and sprinkle with dill or a light dusting of parsley.
