Creamy Chicken Tomato Bake

Ingredients
  

  • 3 tbsp butter
  • 3 tbsp flour
  • 1 cup milk
  • salt to taste
  • 1/4 tsp dried thyme
  • 2 small tomatoes, diced
  • 1 can sliced mushrooms
  • 3 pounds chicken pieces boneless, skinless
  • green onions several, sliced

Instructions
 

  • Melt butter in a skillet. Stir in flour, then milk, slowly, stirring constantly on med-low heat until mixture thickens. Pour into a liquid measuring cup. Add salt, thyme, tomato and mushrooms. Set aside.
    Heat oven to 400°F. Place chicken in a greased 9 x 13 baking pan. Sprinkle with paprika. Bake for 15 min. Reduce heat to 350°F. Spoon sauce over chicken pieces. and bake another 20-30 min.
    Remove chicken pieces to a platter. Sprinkle half of the green onions over the chicken pieces. Pour sauce from the pan into a dish, then stir in remaining green onions.
