Creamy Chicken Tomato Bake
- 3 tbsp butter
- 3 tbsp flour
- 1 cup milk
- salt to taste
- 1/4 tsp dried thyme
- 2 small tomatoes, diced
- 1 can sliced mushrooms
- 3 pounds chicken pieces boneless, skinless
- green onions several, sliced
Melt butter in a skillet. Stir in flour, then milk, slowly, stirring constantly on med-low heat until mixture thickens. Pour into a liquid measuring cup. Add salt, thyme, tomato and mushrooms. Set aside.Heat oven to 400°F. Place chicken in a greased 9 x 13 baking pan. Sprinkle with paprika. Bake for 15 min. Reduce heat to 350°F. Spoon sauce over chicken pieces. and bake another 20-30 min.Remove chicken pieces to a platter. Sprinkle half of the green onions over the chicken pieces. Pour sauce from the pan into a dish, then stir in remaining green onions.
